Parmesan Roasted Red Potatoes

Potatoes are my favorite thing in the world.

I know I said tacos are probably my favorite food ever, but there’s just so many delicious meals you can create using a potato.

Here’s one of my favorite potato recipes. It’s simple side dish that doesn’t use very many ingredients. Very easy. Very tasty.


5 or 6 Red Potatoes diced into cubes or quartered

Extra Virgin Olive Oil or Butter, melted (I prefer butter)

1/4 cup of Grated Parmesan Cheese

Sea salt and pepper, to taste



Preheat oven to 350 and lightly grease your baking dish

Dice potatoes however you would like then boil in a large pot for about 5-6 minutes. Remove from water and allow to cool slightly. Drizzle with olive oil, or melted butter, add salt, pepper, and parmesan cheese. Mix until coated. Place potatoes in baking dish and place in the oven for 20-25…
